Finca El Ocote Honey (Honduras) Light roast 150g
Yeltsin's grandfather and father have been cultivating coffee for many years, and Yeltsin learned about coffee by working alongside his father during his childhood.
His grandfather gave his father two plots of land for planting coffee. Using the profits from selling coffee from these plots, his father purchased additional land to expand their coffee cultivation.
One of those plots is the Finca El Ocote farm. In 2014, Yeltsin’s father gifted him this plot of land, which had originally been inherited from his grandfather.
In 2016, Yeltsin began cultivating Parainema and Pacas on the farm. By 2018, with the support of his family and San Vicente, he prepared his first micro-lot.
Yeltsin is currently improving the farm and diversifying into other crops, such as honey and avocados. The success of Yeltsin and his family lies in their collaborative efforts on the farm.
**Honey Process**
After removing the pulp from the cherries, the parchment covered in mucilage is placed in plastic tanks to ferment for 72 hours. Following this, the parchment is dried on African beds for approximately 10 days.
