Made in Seki, Gifu — a city with centuries of blade-making tradition — this is the everyday chef's knife in the series. The 180mm blade is the size that handles most daily kitchen tasks with ease.
The round bar handle looks sharp but fits the hand naturally. All stainless steel construction means no rusting and straightforward care. The blade is three-layer: corrosion-resistant stainless steel on both faces with high-carbon molybdenum vanadium steel at the core, marked at the edge by a ripple pattern where the layers meet. Resharpenable — a whetstone is recommended where possible.
