Houjicha is made by roasting green tea over high heat — a process that breaks down the bitter tannins and catechins, softening the flavour into something clean and easy, with a deep, rounded fragrance that is entirely its own. The liquor is a clear amber; the taste unhurried and gentle on the palate.

At Nitao Chiran Tea Garden in Kagoshima, the roasting is applied to sweet stem tea — a considered choice that brings out a natural sweetness beneath the toasty warmth. The balance between flavour and fragrance is something the garden tends to carefully; too little heat and the character doesn't develop, too much and it loses the tea beneath. Low in caffeine, it is one of the few teas suited to any time of day and anyone at the table — children and elders included.

Flavour Profile

A premium deep-steamed sencha with exceptional body and depth. Richer and fuller than the Gin — concentrated umami, pronounced natural sweetness, and a fresh, clean finish with lingering warmth.

Production

Grown in Chiran, Kagoshima. Only the finest young buds — selected for their weight, brightness and density — are used. Deep-steamed using Nitao Chiran Tea Garden's own method to bring out maximum depth of flavour, colour and aroma.

Brewing Guide

For best results, use water cooled to around 70–80°C. Steep for approximately 60–90 seconds. Deep-steamed sencha brews quickly — a shorter steep time is recommended to preserve balance and prevent bitterness.
