Rich in calcium, the spicy flavour of these dark green leaves increases with maturity. The crunchy stalks and tender leaves are excellent for salads, but can also be steamed, pickled, or added to soups and stir-fries. Grown in Japan since the 18th century, it was named after the Komatsu River in Edogawa, Tokyo.
