The same round bar frame as the standard Peeler — the same feel in the hand, the same rounded stainless edge that sits naturally in the palm — but with a julienne blade in place of the peeling blade. It cuts vegetables into strips of approximately 3mm, the right width for kinpira, salads, and namasu: things that will be cooked, dressed, or worked with salt rather than eaten straight from the board.
Stainless steel means no rust and quick care. When the blade eventually dulls, it is replaced with a single screw — a No. 2 Phillips screwdriver is the right size, despite the screw appearing small. Replacement blades are sold separately. The frame is shared across the peeler series, so peeling, julienne and extra fine julienne blades are all interchangeable.
